Located in the heart of Lygon street, Fossey's is Carlton’s very own and much loved Boutique Distillery. Featuring a seductive and charismatic upstairs Cocktail Bar plus a downstairs fully operational distillery, kitchen, bar and seated alfresco area.

Fossey’s offers the highest quality of Victorian premium, small-batch gin, whisky, vodka and rum. Throw in a tasty booze-inspired Tapas menu and function menu, and we can assure you that you and your guests will be impressed with this divine space!

Just some of the delectable beverages on offer from Fossey's Bar include Fossey’s Shiraz & Desert Lime Gin and Tonic, Fossey’s Red Gum Rum with dark soda plus many more varieties and specialty cocktails such as Fossey’s favourite 'The Gin Ginger’ and ‘The Ginsecco. They are experts on distilling and swilling you the perfect beverage package from their exquisite bar and venue.

Live Music is absolutely welcome at Fossey’s with a small stage or elevated section for musicians, Fossey's can also offer your guests gin, whisky & rum tastings and take-home bottles and gifts for something a little unique!
