Tucked away behind an unassuming industrial facade at 82 Rose St, Absinthia is one of Fitzroy's great surprises. Ring the doorbell, and be whisked back in time to a gorgeous speakeasy decked out in Parisian style, punk collage and local art, all to better enjoy Australia's best range of traditionally made authentic absinthe. With helpful staff on hand to spin tales of their trademark beverage's infamous past and help the diverse clientele with the theatrical preparation ritual, Absinthia is a great place for a date, a nightcap, or for anyone who enjoys a relaxed atmosphere and unique beverages.

In addition to the array of absinthes, they also have a range of local craft beers, wines, spirits and a list of historic and experimental cocktails to suit any drinker. A range of traditionally aged Nicaraguan cigars is also available, which customers can enjoy in the green illumination of our courtyard.

Each month Absinthia hosts its poetry night, featuring well established local talent in addition to an open floor for newcomers, along with the Starving Artist special offering discounts on the absinthe of the night and selected cigars. They also prepare a range of events for holidays and art installation openings, such as Bastille Day, New Years and our highly entertaining Christmas Murder Mystery party.
