Della Hyde is Applejack's playful interpretation of vintage hotel bars of the past, with charming interiors and service, good tunes, and a strong focus on seasonally fresh cocktails.

Arches and pink hues defining the space with inspiration drawing from Wes Anderson (Grand Budapest Hotel / Royal Tenenbaums, Darjeeling Ltd) and inspiration from owners Ben and Hamish’s own travels, creating a space truly unique to the Sydney night space.

Della Hyde can mainly accommodate cocktail events of up to 180 guests. The kitchen serves up a delicious selection of European & North African inspired dishes that can make a substantial dinner or just snacks alongside cocktails or wine.

The atmosphere at Della Hyde is quite intimate and cosy at the beginning of the night but can get pretty festive and funky as time goes by. DJ’s and live music on the weekend makes it the perfect spot for a good time with friends or colleagues.
