Located in the basement of a heritage listed building in the heart of the Perth CBD just minutes from the Perth Arena, Varnish on King is a little rock n roll American Whiskey bar.
Head Chef, David Allison (Ex Vue du Monde Sous Chef) creates dishes designed to be shared for a ‘conversational’ style of dining and fuses American classics with an Aussie twist that taste as impressive as they are presented.
What they do is simple. Source the best food, the best wine and the best whiskey to share with friends. As a result, Varnish on King houses what is most likely to be one of Perth’s largest bourbon and whiskey collections in one bar, with everything from Kentucky bourbons and American whiskeys, ryes and other unique spirits. Whilst the focus is on American Whiskey, Varnish on King also boasts a wine list of over 100 bottles and over 20 beers which change and evolve constantly.
For the true whiskey enthusiasts, be sure to try their famous bacon flight - 4 different styles of bacon paired to 4 different styles of American Whiskey… no, this is not a joke.
Varnish on King is certainly not your average bar (incase you hadn't noticed already), and offers perks such as 'whiskey passports' to their customers. Just like any passport, it allows you to travel the world, or in this case list of whiskeys, ensuring you can work your way through their extensive list!
