After closing in May 2018 for the renovations, Captain Baxter returns with a lighter and brighter look inspired by the tropical beach bungalows of the 1920s. The hero of Captain Baxter’s revamp is a fully retractable roof that brings guests even closer to St Kilda’s foreshore, plus a whole new aspect and view overlooking the beach to the south.
The design enhances views across parkland to The Palais Theatre, St Kilda Marina, St Kilda Beach, the pier, the city skyline, and even right across to the You Yangs. Clear glass balconies and large sliding windows provide guests with uninterrupted views of the bay.
The first-floor restaurant and bar now has more space and more seating. The lighter and brighter look is inspired by the coastal location and heritage of the St Kilda Sea Baths building. A new palette of white, timber and rattan, including playful wallpaper and perforated textures are inspired by beach bungalows of the 1920s.
A new pavilion structure and movable planter screens punctuate the airy and spacious first floor to create intimate nooks and comfortable dining corners. Plus, a lush collection of palms and indoor plants bring a relaxed and tropical feel to the space.
